Nutritionist – Universal Epic Universe in Universal Orlando Resort

Universal Orlando Resort believes in-person collaboration is key to our success. Many of our Team Members work in a hybrid capacity, contributing from the workplace a minimum of three days per week. You’ll learn more about this during the recruitment process.JOB SUMMARY: Create, manage analysis and standardize all menu items with complete nutritional data for all food/beverage items complete with generated labels to comply with the FDA guidelines. Also assists the Quality Control Chef with quality control audits in the field. Ensures quality and safety standards are followed. Provides constant monitoring of the HACCP Program through review of documentation.Major ResponsibilitiesAnalysis of all menu items identifying all nutritional data to comply with the FDA Guidelines. Ensures that recipes match labeling and nutrition information for each product in production.Assist Quality Control Chef with safety audits and HACCP requirements to stay in compliance with the Florida State Law for food safety.Identifies all allergens in recipes and menu items resort-wide.Performs yield tests on current or new recipes to ensure accuracy of nutrition information and food cost.Reports and inputs all information into the Eatec software system.Understands and actively participates in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training and team member involvement activities.Performs other duties as assigned.SCOPE: Moderately routine; general policies applied. Self-Supervising, Decision-making.
